About

Who is he?

Tom Mc Dermott is the Director of Operational Excellence for Europe, Africa & Middle East for Hilton. Tom decided to join the hospitality industry after being inspired by a speaker from the Dublin College of Catering while in his final year at Bush Vocational School in 1987 where he was told that the hospitality business has 100% employment and is one of the only industries you can work at in every country in the world and on land, sea and air.

Now in his 32nd year in the hospitality business and after completing a 1 year NCCCB/City and Guilds F&B service course at Dublin College of Catering Tom has been fully employed and has visited almost 100 countries working in a wide selection of hospitality businesses from the Hilgrove Hotel in Monaghan, Dobbins Wine Bistro in Dublin, Starwood Hotels and Resorts in Edinburgh and London, Cunard Cruise Line in Miami, Radisson SAS in Edinburgh before joining Hilton as a GM in Scotland and London in 2006.

Tom has lived in the UK for over 20 years and has recently returned to Ireland with his young family where thanks to some modern technology, a good broadband connection and the motorway link to Dublin Airport he is able to work “remotely”  in his current role Overseeing Hiltons “Operational Excellence” initiative across EMEA.

Leading a small team who are based in Glasgow, Copenhagen and Berlin, Toms role involves identifying the best operational best practices and implementing them in Hiltons properties across the region through a series of projects which positively impact the Guest Satisfaction, Team Member Experience &  Financial Performance in a sustainable way.
